Saturday Morning Vegan Pancakes

And all because we didn't have eggs.

But a friend of mine recently told me that you can substitute chia seeds for eggs.

And since our neighbor recently gave us a pound of organic chia seeds, we were in luck!

And the result of our little experiment was so tasty. We are certainly making these again.

Here's what we did...
  • 2 cups whole wheat flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp sugar or brown sugar
  • 2 Tbsp oil
  • 2 Tbsp chia seeds soaked in 1/2 cup water for about 20 minutes to thicken
  • 2 cups almond milk
  • 3/4 cup frozen organic raspberries {any fruit and even pumpkin would be awesome}
  • 1 tsp cinnamon
Mix it all up and cook it on your griddle just like regular pancakes
and you honestly can't even tell there's no egg!
