Peanut Butter & Dark Chocolate Snack Bites
1 cup oats
1/2 cup peanut butter (any nut butter would be awesome)
1/4 cup honey
1/2 cup coconut
1/2 cup chia seeds
1/2 cup dark chocolate chips
1 tsp vanilla
Mix everything together.
Add more nut butter, if necessary.
Chill in the refrigerator for about half an hour.
Roll into balls and enjoy!

This is a variation of something a friend brought to playgroup recently.
I think I could make a batch everyday
and Ben and I could finish it all...easily.
So yummy!
